How to Make Cookie Pies

Serena: Hi, I’m Serena and this is Teri and we are the Farm Chicks. Today, we are going to be making a really simple little pie recipe. Teri: It’s like a cookie pie, that’s what we’re calling it. It’s a cookie dough that we’re going to bake in a pie crust so that the combination of cookie and a pie and I don’t think you can beat that. And we’re going to do a peanut buttery chocolate cookie. We’re going to start with filling four miniature pie tins with whatever your favorite pie crust recipe is. And you’ll want to do a double batch for a bottom crust and a top crust. I think it will probably use just about the whole amount, maybe like a little bit leftover. But this also makes a standard one crust pie if you would preferred it to do that. It just so much fun to do this smaller pies. Serena: Let’s get started. We will add in two eggs and Teri’s just going to beat those until they’re floppy. Teri: Then we’re going to add ½ cup of flour and then ½ cup of white sugar and ½ cup of brown sugar, we will just mix this until it’s incorporated. Serena: Then we’re going to add in ½ cup of butter and this is at room temperature and ¼ cup of peanut butter. Teri: And you can use creamy or chunky which ever you prefer it’s not going to change the recipe at all. Serena: And ½ teaspoon of vanilla. Teri: Now this is where we add in the fun stuff. We’re going to add in ½ cup of chocolate chips which are semi-sweet chocolate chips and ½ cup of peanut butter chips. Serena: We will scope the filling into the shells. Teri: And they will rise up just a little tiny bit and actually the dough since there’s butter in the dough it will come down just a bit you’ll see when we take them out of it. They’ve evened up quite a bit. Serena: We’re going to stick this in the oven at 350º for about 15 minutes. So this have cooled for about an hour and then put them on a cute little tray. Teri: They look good. Here’ the tricky part. Serena: No one said that this is pretty. It’s going to pop right on in. It’s really great.
