In heavy two qt saucepan combine a can of jellied cranberry sauce, with a half of cup of dry white wine and a tablespoon lemon juice. You will want to use can sauce because of its smooth consistency. Cook over medium heat, stirring constantly until the cranberry sauce melts and mixture is smooth. Rinse the hens in cold water and pat dry. Sprinkle the cavities with salt and pepper. Add a few rosemary sprigs. Now, close the cavities and secure with wooden toothpicks. Place the hens, breast side up in a lightly greased shallow pan. Next brush the hens with the cranberry mixture, coating all sides, season with salt and pepper. Bake at 350 F for 45 minutes, basting frequently with the cranberry sauce. Serve the hens drizzled with an extra spoonful of salt. These little hens will not only feast great but the presentation is adorable.
