Mike: Hi! I am Mike.
Steve: And I am Steve.
Mike: And when it comes to the holidays there are three things that we love.
Steve: Gifts.
Mike: Making snow angels.
Steve: And the jelly like wiggle of cranberry sauce in a can.
Mike: We don't.
Steve: We don't?
Mike: No, we don't like that stuff.
Steve: Well, what can we do different?
Mike: We have got a fresh cranberry relish. It's super simple and super easy. We are going to make it right now.
Steve: Okay. For the delicious cranberry citrus relish, we are going to start with some fresh or frozen cranberries, the zest of one lime, one orange and one lemon. The segments from those same fruit, cup and half of sugar and a little bit of Grand Marnier. We have added the sugar to a dry pot. We are going to stir it until it melts down to a clear amber color liquid. This should take about three to four minutes.
Mike: Now, that's still sugar does not melted but this is going to melt soon.
Steve: When your sugar is melted and it's clear and it's of amber color, we are going to go ahead and add the zest. We are going to cook that for about 30 seconds. Now, you want to go ahead and add the segments from the fruit. Now, we are going to add the cranberries and cook this down for about 12 minutes to cook jam like.
Mike: What jam like, Steve?
Steve: You know, Mike it is all sticky and thick.
Mike: And the fruit cooks down. Yeah, exactly.
Steve: That's right.
Mike: And we will add about a quarter cup of cranberry to the cranberry sauce.
Steve: We are going to remove this from the heat and let it cool completely.
Mike: See look, told you Steve.
Steve: You were right, Mike. I am never going back to that wiggle of cranberry sauce ever again.
