Hi, I am Chef Keith Snow. Welcome to my kitchen. I will show you to make a very simple, somewhat sexy soup, this is a cream of artichoke soup. I am sure you are probably never seen it. I am going to show you my version today, great for dinner parties, a little different and really cool.
First thing we need to do, to get a heavy bottom pan here, we are going to turn on the heat, and then we are going to slice up really quick two cloves of garlic, and a little shallot. This is going to be a pureed soup, so we just need little slices, a little shallot, nothing fancy and now in our pot, we are going to take a little bit of extra virgin olive oil.
About a tablespoon and a half, we will get this aromatics down in there, this one get this going, we are going to take a little of our harvest eating seasoning. Already, a beautiful aromas coming from the pot. Now, let us talk a minute about our artichokes, this is the artichoke heart, an if you ever process an artichoke from start to finish, it is a bit of a job and got to peel off the leaves away and pick out the choke and all that, they are not in season right now, so I am using this canned artichoke heart. So these come in water but they do have sodium in it, so this are rinsed very judiciously to get as much sodium out as possible, so that is the beautiful artichoke heart and it is simple to use this like I said, they are canned available year round. So after we get a little color on here, we will just take all those, get them right there and now we have an organic chicken broth. This is four cups and then we have one half a cup of organic heavy cream right in and I want to get all of that out, stock is expensive, you cannot waste it. So now we stir this through, this simply needs to come up to a simmer, we simmer it for a few minutes and then we take the stick blender, I will show you how to do it and I will show you how to serve it in a few minutes.

Okay, I pureed our soup. Put this handy stick blender. We will take that and set it aside, and now I want to take a little taste to make sure that it is well seasoned. Wow! Another really strong artichoke flavor, does not need a little seasoning, put a little more of this in here and we will stir it through and I will show you how to serve it. It is a little bit foamy right now from all of the air that I just ripped into it. Okay, take a nice little bowl, and then I will take this another little touch of this for garnishing purposes, just float a little seasonings on top and there you have a very simple to make cream of artichoke soup. Try this one some time I think you are going to like it.
