Hi I am Chef Keith Snow, Welcome to my kitchen. I want to show you how to make cream broccoli soup. I am sure you have probably try that stuff in the can which is terrible. It is very easy to make from scratch were in the spring broccoli is very prevalent in the market. This is the time when year when it grows very well in most local areas so let us get started. First thing we need to do is take a pretty good heavy bottom pot got it over medium high heat and take just a little bit of extra virgin olive oil, couple tablespoons of that and then we have got one white onion that is diced up. Start this one going and then we have two cloves of garlic that are minced up get those in there as well. We will put a pinch of kosher salt ,some black pepper and let this cook and this is very simple soup because there are no herbs and anybody can make this generally with the things you are going to have in your house anyway.
So let this onions sweat out and here is our broccoli what were going to do is just cut it off and this is going to be puréed soup so we are not overly worried about the shape of the broccoli. But we will do is were going to use these stalks, we will peal off through the steamy pieces and then we will simply slice this up. So that they cook because those are pretty hard okay, so we throw this in here so let us take the rest of our broccoli crowns , I am just going to throw in there like this they are going to cook and fall apart get everything into our little soup pot and then we will take our broth here. This is five cups we will carefully pour that in just like that and then here is about three quarters of a cup of previously frozen spinach. And the reason we put that in there is to help give this a dark green color so just dumped that in their that just been sought out and now we are going to let this come up to a boil. I am going to put the lid on it and cook it for about 25 minutes.
I added my cream cook it for a few more minutes and then I use my stick pureed the soup. Now I want to taste it for seasoning and it definitely needs a little salt and pepper so add some salt and pepper to it and this is a great dish kids usually love this. So I squirt that seasoning through and then I will play it out in a nice bowl of it and how I like to finish this soup is with just one little table spoon parmigiana reggiano right on top and here is my creamy broccoli soup hope you give this want to try.
