Hi, I am Chef Keith Snow. Welcome to my kitchen. I want to show you how to make one of my favorite recipes. It is Cream of Tomato Soup. You do not have to buy it in the can anymore, you can make it yourself and as you are going to see, it is very quick to do.
The first step, we have a little pot here that has been heat over about a medium heat. We are going to take some extra virgin olive oil, about two tablespoons of oil, get that started in there and then we have right here, a half of cup of minced white onion.
You get that going, just go and season that with the touch of cushier salt, a little black pepper and let that sweat out a little bit.
Now, the next step is I am going to add two tablespoons of all purpose flour. And we really do not want to color these onions, just a quick sweat to release some flavor, we add the flour in here and essentially, we are making a little bit of a rue in a pan, that is going to help the soup get a little thick later.
So as we let this cook, so we get that raw flower taste cooked out, let me talk about the tomatoes.
These are san marzano tomatoes, and the way you know they are san marzano tomatoes is you need to look on the label for very specific logo that is on there, that is certified that they are truly san marzano tomatoes, and it is definitely a big difference so go out your way to get this.
Now, those are plum tomatoes, and what I did is just pop them in a blender, give it a few pulses to make it a puree at of it, of course in the summer time, if you are growing, good plum tomatoes, you can skin them and certainly use those fresh when you have an abundance to make the soup.
But this time year tomatoes just are not around yet so I am using this canned san marzano which are great.
So now in this pot, the flower and onions are pretty much ready, they cooked, you know that flower taste out so, we are going to take this tomatoes and that is 128 ounce can of tomatoes. And this is a soup that can be ready literally in 20 minutes. On a busy week day night, you want to feed your kids. Who does not love cream of tomato soup?
You serve them with a grill cheese, you live in large, one of my favorite dishes or meal as a kid.
Okay, so now we are going to re season this because I just added all those tomatoes, a little more salt, little pepper, now we are going to take right here one quarter of a cup of organic heavy cream. That is all that is in the entire recipe, we are going to stir this through, put the cover on this, let it come up to a simmer and then we will bowl it up and I will show you how it looks like then.
Give a little swirl through, and I will guarantee that this is far better than canned cream of tomato soup. And on a nice cold winter or fall day, you pair this up with a grill cheese like I said it is really a good stuff.
So I will just garnish it with a few chives, you can leave the chives off if you are giving it to your kids but here is a wonderful cream of tomato soup, try that today.
