Serve the flavors of Havana in your backyard, with these recipe for Cuban Roasted Pork with Plantains.
First, clean pork tenderloin by removing the silver skin. If your pork loin has a thinner tail, tie it for even cooking .Next, to a small bowl with one tablespoon of olive oil, add two large minced garlic cloves, one teaspoon of salt and one-and-a-half teaspoons of coarsely ground black pepper.
Brush this garlic mixture on the pork tenderloins. Next, cut the ends off the plantains and then peel and half. Drizzle the plantains with olive oil and season with salt and pepper, then rub the flavors in. Place the tenderloins on a hot grill and cook turning once until they are brown on the outside, and just still slightly pink in the center. This should take about 18-20 minutes.
Now place the plantains on a greased grill to prevent them from sticking, and cook turning once until tender and brown, about 7-8 minutes. When they are done, transfer the plantains to a platter. And then transfer the tenderloins to a cutting board and thinly slice the meat.
