Hi, I’m Cheryl Forberg, nutritionist for the Biggest Loser. I recommend all my weight loss clients
incorporate whole grain foods into their diets because they keep you satisfied, steady your blood sugar
and provide plenty of heart healthy fiber. To ensure you get enough whole grains, start your day off
with a fiber rich cereal. At lunch, make your sandwich with whole grain bread and experiment with new
whole grains in the kitchen such as --, -- or brown rice. Those grains may sound intimidating but they’re
really easy to make. Today I’m going to make one of my favorite whole grain recipes cumin spiced – and
lentils from my book Positively Ageless.
First heat one cup of the broth. Place the – in a small mixing bowl. Pour the warm broth over the --,
cover and allow to soak for 30 minutes. Heat the oil in the saucepan over medium heat. Add onions
and sauté for five minutes or until tender. Add the garlic, thyme, cumin, mustard, salt and cook stirring
frequently for one minute longer but do not brown the garlic. Add the remaining two cups of broth and
bring to a boil, add the lentils. Reduce the heat to low and simmer for 15 minutes. Add the – and
simmer for 10 minutes longer, remove from heat and let stand for 10 minutes. Garnish by stirring in the
tomatoes, onion, cilantro and olives. You can serve it hot or warm.
