Eating Low with Amy
Hi this is Amy and welcome to Eating Low. Today we’re going to be making one of my favorite recipes and that’s diet orange soda chicken. Now, it sounds weird but it actually comes out really good and it gets a good Chinese food kind of flavor. It’s diet orange soda and soy sauce. And it’s super easy to make. Very, very easy to make but there are a couple of steps you do have to marinate the chicken. So that’s what were going to do right now. I’ve got my chicken and I’m going to pull out at the bag and you just watch me not handle chicken again. And today this chicken breast that I got at the grocery store, I’m like the Playboy Playmate of the chicken world. They are enormous chicken breasts that’s all they had so I got to make you do with these big huge gigantic chickens but that’s okay. I’ll just cut them, once this all cuts and stuff, I’ll cut it into smaller portions. You know me, don’t touch the chicken, oh they’re so heavy. You could have fall off the—I’m afraid it’s going to fall out the porch. They’re big gigantic chicken breast. Just somehow get my bag open. Shouldn’t have opened him beforehand but looking good. And I’m just kind of rinse them off. Good, there’s like a little piece of fat on the front butt. Okay, and then rinse them off and then just pluck them in the bag, I will going to hold the bag open for all the other chicken that come. Another gigantic chicken breast and see like that fat goes on there, other people would cut that off and you probably want to cut it off. All this when it cooked off or I’ll cut it off when it’s done. I don’t want to touch it, gross, that’s disgusting.
I don’t even like looking at it but that’s okay. you don’t want to know this once it’s cooking. All right, so another chicken into the bag and then our last chicken, oh goodness these are like huge. They really are. That was like heavy. I think it was 2 pounds of the chicken in that container. And normally, when I buy the chicken in that packing, so there was more like a pound, maybe a little bit over a pound. This is really big today. The last chicken into the bag and wash my hands. I’m a little with the hand wash thing and the chicken, but that’s okay. Okay, that wasn’t too bad.
Now, here comes the fun part. We are going to add like a quarter cup measure. We’re going to add quarter cup of soy sauce. You can kind of play around with this depending on how many chickens are you using and quarter cup is good for me, you know me in my little salty soy sauce issues but a quarter cup is good and now we’re just going to open diet orange soda.
Now in my grocery store is KaBloom and I don’t think they have this around everywhere but it has a diet orange soda that’s sweetened with Slenda. The only other diet soda that I know of that is sweetened with Splenda is Diet Right orange soda. You can use other diet orange sodas that are sweetened with aspartame. It’s just some people like to stay away from the aspartame. They think it stalls them. I’m, just still—the jury’s out in my view, I don’t know whether it stalls me or not. I don’t think it does but I don’t know. I prefer the taste of Splenda, it gives a sweeter taste so that’s why I always look for the Splenda and I was lucky enough that my sour brand soda actually is sweetened with Splenda.
So diet orange soda, just a can, it goes into the bag and just so very easy. And that’s it. We’re just going to zip him up and try to squeeze all those air out and then just a zip him right up. There we go, I’m using the off brand of locks so hopefully this will hold. And I’m just squishing him around a little bit getting it mixed up so that all the chicken breast get a good mix of the soy sauce and it’s fun.
So now I’m going to pop in our container. You can marinate this overnight, you can marinate it for a couple of hours. I forgot to poke holes in it. I’ll poke holes in it later. I don’t know should I, should I not. No, forget it. I didn’t do it the first time and now I feel guilty. Okay, I’m going to open it up and just poke a couple of holes from the chicken. I always forget something at this recipe. It’s so easy. The last time I made this recipe, I forgot to marinate it. And I just clocked the chicken right into the mixture of the soy sauce and stuff and it came out fine. It wasn’t as flavorful or seasoned as it has been in the past because I didn’t marinate but this time I remember to poke the whole thing, okay. I just poked a bunch of a holes, I’ll put it in and poke a hole in my bag. This is all a big nasty mess in my refrigerator. All right, let’s zip him back up now that he’s ready.
Let’s squeeze all the air again. All right, now he’s good to go. I did poke a whole in my bag. All right were going to double poke him. This is like the easiest recipe I swear. I really, really, swear that this is like so simple to do and I manage to make it a little bit complicated. Not to mention I was getting chicken fat all over. Okay, a double Ziploc, he’s really, really not going to wake this time. All right, his going to go into the refrigerator, marinate as long as you want. The longer you do it, the stronger the flavor will be. I’ll probably marinate it for a couple of hours and then I’ll cook it tonight so that it’s done in time for dinner. I’ll be back.
So, my diet orange soda chicken and its time cooking and I’m going to take it out of the oven and check it to make sure it’s cooked. I’m just going to pull it out really quick. Oh left the sauce. You can see that the chicken, that’s like nice and crispy no, it’s not like super crispy but crispy for chicken. It gets like a brown kind of top on it, that’s probably the soy sauce, and I’m going to pull out one of those chicken breast and I’ll just cook it and make sure its good.
These are really fat, fat chicken breast. Wow, it kind of looks good. Look how nice and cooked inside it is. It’s like really juicy, it’s nice and white, you know it’s fully cooked through it and it’s just tender I mean you saw how easy it was for me to cut that. This is one of my favorite, favorite, favorite dishes. I make this almost every week, if not every other week probably more like it but I love diet orange soda chicken and I hope you do too.
Thanks for eating low with Amy. I forgot to do my little taste but hmm, I guarantee you its good. I love it. And you got all that extra juice , you can keep it if you want. I usually pack and I got a mouthful of chicken. I usually pack mine up in the container with them but it’s really good.
