Hello this is Chef John from foodwishes.com. And today, we are doing Dulce de Leche. That’s right, dulce de leche is how it translates to Spanish. It’s basically a sweet caramelized milk, really, really delicious and so easy to make.
You’re going to take a can of sweetened condensed milk and from the looks on that label, I believe this is cow’s milk. So with a hammer, make two little pin wholes with a nail. That serves a couple of purposes. Number one, it won’t explode in your face which is you know, always a bonus and it will also allow us to check the doneness of this.
So, what you want to do, you want to put that can in a little pan of boiling water. You want to keep refilling that with water otherwise, it will run out of water and it will burn. So, keep watering it. We’re going to cook this for three to four hours. It cooks a long time. It starts out white kind of that vanilla color and as it cooks in that pan of water, it will slowly turn browner and the darker brown it gets, the thicker your Dulce de Leche will be. So, you can cook this a really long time to get almost a thick caramel candy. I like to cook it not so long, I like to cook it to kind of you’ll see the color when I speed this up here, so you’ll see when we take this off. I like to cook it until it’s about this color because if that cools, that gives me just a beautiful caramel sauce.
And near the bottom, you need to be careful, there is going to be some darker thicker chunks that touched the bottom of our pan of water. So, what you want to do is dump this into a bowl, just take a whisk and just break up those thick pieces. Since these are still real hot, those are kind of going to whisk in nicely then when this chills, you’re going to have homogenous sauce and it has such an incredible flavor. I like it better than caramel sauce. You use it anyway you use caramel sauce, on ice cream. Let me slow this down here, look at that, oh man. All right this is great on just toast, this is great with cookies, and cakes, and brownies and just to pour on people and just it’s so, so delicious.
Anyway, that is how you make Dulce de Leche. So easy, it cooks at one ingredient. I think that ties the record for least ingredients in a recipe. And anyway check the site if you need more info but not only there and as always, enjoy!
