One of my favorite dinners has got to be pasta with a Bolognese sauce and if you think you already have that one covered wait until you try mine.
So, that’s just 2 stalks of celery, a half a cup that I finely chopped here. I’m going to add that to my pan where I have a tablespoon of oil warming up here. Then I’m going to add a couple of onion, also finely chopped and half a cup of diced carrots, just let that soften for a couple of minutes.
Now, here I have 8 ounces of mushrooms and this is really my secret ingredient. They add an incredible meaty texture and meaty taste. I have three quarters of a pound of whole wheat fettuccini. I’m just going to boil this up according to the directions on the package about 8 minutes.
Okay that’s ready for some garlic, three nice big, juicy cloves of garlic. I’m just going to press it in my trusty presser right into the pan here, to stir that through and then I’ll add the beef. This is a pound of extra lean ground beef, 90% lean or more, 85% ground beef is not lean so don’t be fooled by that. I’m just going to round this breaking it up all the way, 2 tablespoons of fresh thyme. It’s nice to be able to look at the time, cook a little bit and with the meat to stir that through and the meat is browning nicely.
I’m going to add my liquids, just two cans of diced tomatoes, no salt added. Now, half a cup of chicken broth, low sodium chicken broth you save a third of the sodium. Now, just let that simmer for five minutes while I get my pasta pot off.
Whole wheat pasta used to have a better reputation maybe rightly so but they’re doing such a great job making it nowadays. It’s much more tender and delicious than ever before. It’s good to get whole grains whenever you can. I’m just going to add this back to the pot and we’ll be ready for the sauce.
Now, another secret ingredient is some evaporated non-fat milk and I used this to replace cream a lot. I just need a quarter of cup. That is ready to be added to the pasta. It’s really important to kind of melt that all together like this. I’m just going to give this a little stir. Can you believe you can get this on the table in less than 30 minutes? Pretty cool, looks great with a lovely sauce, just put some parmesan cheese on there. It’s fast. It’s easy, delicious, almost too good to be true.
