Thanks for checking out fixmyrecipe.com, Chef Billy Parisi here and as usual you know the routine. We have another that needs a little fix, comes from Brandy Belo of St. Louis, Missouri. She has a flavorless and for better context, a lack on French Onion Soup.
Want to get our Rondeau nice and hot and add a little extra virgin olive oil. We’re going to add our nice yellow onions to our smoke and hot Rondeau pan. Oh yeah! Okay, Brandy these onions are coming along beautifully, now to make these onions really sweet, we’re going to add a little granulated sugar right to our mix, it’s going to caramelized those onions even further. Alright Brandy, I have already told you 20 times I’m Italian, I’m going to throw a little of those garlic red in the mix. Now that our onions are nice and caramelized and our garlic cooked through, we’re going to add some our Marsala wine. Brandy, this is going to add a lot of flavor to your French Onion Soup.
Now, once our wine is cook in we are going to add some of that beautiful, beautiful veal stock we made a few episodes ago on fixmyrecipe.com. Brandy, now we are going to add a little bit of dry herbs, one bay leaf, a little bit of dry thyme and dry sweet basil. Okay Brandy, our stock has on for about an hour, it is nice and reduced the onions look great, the herbs are nice and infused in our soup. Now, I am going to add a tone of flavor to this French Onion Soup.
A little kick, we’re going to add just a little bit of Tabasco sauce here and for some natural sauce we are going to add a little Lea & Perrins. Stir that in. Don’t forget, salt and pepper. Okay Brandy remember, seasons once taste twice, you may need to add a little more salt, you may need a little more Lea & Perrins. The point is, get it so your taste buds are just fizzing for more French Onion Soup. All right, let us get our French Onion Soup off, the burner here, it’s still steaming but man, I wish you were in this kitchen and you should get a lot of this, it smells fabulous.
Alright, let me get a little taste of this bad boy, just a little bit, just enough for a little taste you know. Because I got to feed my taste buds, it is a little hot in here, I don’t know. Men, men, men, Brandy, that is absolutely incredible. If you have a problem making this I do not what to tell you because this is just absolutely phenomenal. Remember the things that I told you, one, get those onions nice and caramelized, add sugar. Two, The glaze of Marsala or Madeira wine, any sort of wine will help and add tons of flavors to your French Onion Soup.
Do not forget to pack it full of herbs and reduce that stock down, add your nice seasonings and there ‘s no way you can go wrong with your French Onion Soup. It is actually phenomenal.
