Today I am going to teach you how to make a Thai desert fried bananas. Fried banana, a very common and popular desert in Thailand. All over the country, you can find it at every street corner. The real versions of fried bananas are made by street vendor. And today we are going to make a real stuff.
In Thailand, we use smaller banana, but you can use any kind of banana. And these are the ingredients that you are going to need to make fried banana: six bananas, yellow with a little bit of green, the firmer the better. One cup of rice flour, or you can use all-purpose flour too, one quarter cup of tapioca flour. If you cannot find it, you can use corn starch instead, one cup of shredded coconut. I am going to use fresh coconut just like we use in Thailand but you can use the coconut in the back too. A quarter cup of sugar, 1 tbsp of sesame seed, 1 tsp of salt, half tsp of baking soda, ¾ cup of water, 4 cups of vegetable oil.
Now, we can now prepare the fresh coconut. You are going to need a large bowl to catch the coconut milk. And then hold the coconut in your hand tightly. Use the back of the big heavy knife and hit in the middle of coconut as hard as you can like this. Now, we can now break the coconut into smaller pieces.
Next, use the smaller knife to prime the meat from the shell. Now, we can assure that in coconut I am going to use the food processor but in Thailand we use a tool literally means rub it shredded coconut. I do not know why but this is a lot easier.
Now, we are done with the coconut. Again, you can buy the shredded coconut in the back but this way is more fun. Next, we are going to make the butter by mixing all ingredients in the large bowl. First, we are going to start with the flour. Add the flour in the bowl and then starch, baking soda, salt, sugar, and stir it together. And then add water. And mix until it mixed well. Next, add the sesame seed and shredded coconut.
Mix it all together until it turned a little thick. Next, cut the banana in half and half again. When the banana is done, it is time to start cooking. Turn on your stove to the high heat. If you have the deep fryer you can use that too. Add the cooking oil. When the oil is hot, dip the banana in the butter completely and fry in the hot oil. Turn the banana so it is cooked both side about one minute each side. When it turns to golden brown, take it out from the oil and drain on a paper towel. They come out from the fryer very hot so, let them cool a bit before serving. In Thailand, you could eat them out of a bag but the nice way to eat at home is with ice cream. And you will be surprised how well hot and cold go together.
