Hawaii is known for its white sand beaches, warm tropical climate and outdoor water sports. But any food lover would tell you that the real dorado wahoo is the fresh garlic shrimp served at roadside truck stands over on the North Shore. Hi! I'm Chef Jason Hill, and today we are preparing an amazing shrimp scampi dish, and we are doing it Hawaiian style.
Check this out, aren't these great? I got 10 U-15 shrimp here with the shell on which came deveined. Please, don't substitute this with any other shrimp or this recipe won't have that authentic Hawaiian style. Next, we are going to peel and roughly chop one head of garlic which will give us about 10 cloves, I know that looks like a lot of garlic but we are making garlic shrimp, aren't we?
Alright, now before rich shrimp it's the sauté pan, we are going to dust it in the flour mix, it's one cup of flour, two tablespoons of paprika, and a quarter teaspoon of cayenne pepper. I think it's going to give it the color, and the cayenne pepper is going to give it a little bit of spice. I have my pan preheating on high for about 2 minutes, you never want to add anything to a cold pan, you want to get that pan nice and hot before you start doing your sautéing. Now I'm going to pour half a cup of purified butter immediately followed with the garlic.
Let this garlic cook for about a minute and then we are going to add the shrimp. Here, it's got our shrimp in there. Oh my gosh! This garlic smells out of this world. I am going to sprinkle teaspoon of kosher salt in there or sea salt. All that aroma takes me back to the North Shore. Hey! After three minutes I turn the shrimp, and let him go another three minutes.
Okay, we are almost done. The last thing I am going to do is hit it with 1/8 cup of wine, stir it around a little bit. And add two more tablespoons of butter. Okay, you can see the garlic starting to get a little brown to it, that's what you want. You don't want to overcook and burn it, it will be bitter.
And our favorite shrimp Giovannis and Gahuku, shrimp is served with two mounds of sticky rice and a lemon wedge. I hope you enjoy this. Man, that's good.
