Nothing is more refreshing than bowl of Chilled Gazpachio in a summertime. This called soup is from Andalusia region of southern Spain. Our version uses a splash of hot pepper sauce to add a little thing. Best of all it only takes about 15 minutes to make.
First, cut a piece of still French bread into cubes. Cover with water and let them stand until the bread is soft about five minutes. Squeeze out the water.
Next, in a food processor combined the bread with three cloves of garlic, three cups of dices peeled tomatoes, 2/3 of a cup of dice green bell peppers, 2/3of a cup of peeled and dice cucumber and 2/3 of a cup of dice red onion. Process the mixture until it will becomes a course puree.
Now, pour into a large serving bowl store in 1-1/2 cups of tomato juice, two tablespoon of extra virginal olive oil, two tablespoon of red wine vinegar, hot pepper sauce to taste and salt and pepper to taste. And stir. Cover and refrigerate until well chilled.
To serve ladle the soup into bowls garnish with cucumber and grease with extra virgin olive oil. This is seen the Gazpachio brings the flavors of Mediterian to your outdoor kitchen.
