How to Make Gingered Carrots with Dates

Ingredients and Quantities
1 lb of carrots, peeled and sliced
2 tsp of butter
1 tbsp of ginger root, minced
3 tbsp of lightly packed brown sugar
1/3 cup of chopped, pitted dates
salt and pepper, taste
Directions
1. Add the carrots to a large saucepan and cover with water.
2. Bring to a simmer over medium heat and add salt.
3. Reduce the heat and cook uncovered, until tender-about 5 minutes.
4. Drain the water and return the carrots to the same pan.
5. Add butter, ginger root and brown sugar.
6. Increase the heat to medium and cook, stirring, for 2-3 minutes.
7. Add the dates and cook until warmed through.
8. Season with salt and pepper.
