Buffalo wings are great appetizer anytime of the year, but they are especially delicious coming off to summer grill. They taste great with this delicious blue cheese dipping sauce.
Our recipe makes use of the outdoor grill instead of the deep fryer for healthier more flavorful version of this classic.
First, prepare the blue cheese dipping sauce.
In a small ball, makes three quarters of a cup of sour cream, three quarters of a cup of mayonnaise, one cup of crumbled blue cheese, one finely chopped green onion, two tablespoons of cider vinegar, one teaspoon of Worcestershire sauce, and a quarter of salt until well combine.
Cover and refrigerate the mixture for up to three days.
Now outside, prepare the charcoal grill to medium heat. Separate four pounds of chicken wings at the joints, and freeze the tips for another use, like making your own stock. Add the chicken to a bowl and drizzle with extra virgin olive oil and season with a little salt. Then with your hands, work the chicken to evenly coat.
Remember to wash your hand and cutting board in handling raw poultry.
Next, place the wings on the grill. Cover the grill and cook the wings turning them occasionally until done about 30 minutes.
Take them off of the grill and set them aside. To make the buffalo sauce; to a large bowl, add half of stick of melted butter, and half a cup of hot sauce, mix. Then add the wings and toss in the sauce, making sure they all get coated.
Serve these wings on a platter with a blue cheese dipping sauce with some celery and carrot sticks.
