How to Make Healthy, Quick and Easy Lunches

[Music Playing] People are always trying to find quick and easy healthy lunches. [Music playing] I have here some chicken. Any chicken breast at the restaurant and this was left over. I am going to just chop it. This would be equivalent of about one and half chicken breast about a cup of chicken. So, this is a little more than for one person. I am going to chop up some celery because, like I said anything that I make, I always try to add something that has got some fiber in it. This is not exactly a major green vegetable, but this is volume. This will fill you up. You always want to mix things with vegetables. This is some coarsely chopped celery. One thing I do not do is use fat free or little fat mayonnaise, it is a fake food, I either use a soy mayonnaise, or you could actually even use Greek yogurt in place of mayonnaise, or use a little bit real mayonnaise, not too much. I am going to use about half a tablespoon. This is moisture in celery which will create moisture for the chicken so it would not be dry. I use about a half a tablespoon of mayonnaise. Pesto is the great thing to have it at the house. It is high in fat but it gets so much flavor that you use are very small amount and add something. So, I am using about a teaspoon of pesto mixed with my mayo. And like I said, just do not use that much mayonnaise. You would rather have the real food and be satisfied. So, mayonnaise is egg yolks, vinegar, water, a little bit sugar, but it is real, a little salt, a little pepper. [Music playing] I like this bagged greens. They are convenient, you can get whatever selection you like and this chicken salad is great but that you really want to have some fiber with it and make it more interesting and more creative. And, these containers, I tell you are the greatest things. They portion control your life. We will leave this in the refrigerator. You can take it to work. So I would do a bed of greens, couple of tomatoes for color and then I would scoop some of this chicken salad on top. [Music playing] How worth is that much? [Music playing] This is not exactly fine dining right here. This is lunch on the go for every person in America. So, you buy the packaged greens, you cut up some tomatoes and now you need your protein. I usually choose one protein per meal. I bought a canned white tuna in water. Use about half of it. And, you just place it over the salad. I am going to actually use egg whites. As much as I said, I am not going to use two proteins, egg whites do not come. Egg whites have no calories whatsoever. So, it makes it look nice. It is another nice a little addition it is almost like this is a salad diswise, and just to make a little bit different, instead of olives which are on a traditionally out of salad diswise. I am going to use some capers. They have salt I do not have a problem with a little bit of salt, sprinkles of capers. You could even use if you have sun dried tomatoes in your house you could put a couple of those on here. Definitely always use salt and pepper. And, a store about vinaigrette, use about half a tablespoon. You have not used any fat here yet with your tuna in water. Use just a little bit of Balsamic, drizzle it over. And, there you have a gorgeous salad. If you are taking this to work, you want to dress the salad later put in on the side, you can buy this little containers. It is just, this is gorgeous.
