Meal Makeovers
If you’ve ever made tacos from one of those kits from a supermarket, you‘ll be amazed how high in sodium they can be. So to lighten things up and to add a big burst of good nutrition I’m giving tacos a makeover.
Hi, I’m Liz Weiss and today I’m going to make have-it-your-way tacos. Let’s go ahead and get started. I’ve got a pound of lean ground beef. I’m using 90% leaner higher and I’m going to saut? that in a skillet with a carrot that I peel and shred. We’ve got about a cup of carrot here, any opportunity to add extra nutrition, why not?
And we’ll saut? this together until the meat is no longer pink and the carrots get nice and soft. Now, we’re going to add even more nutrition. I have a can of black beans. I’ve drained and rinsed them. I wash away some of that sodium. We’re going to add these can of beans and what you’re getting here is a great way to extend the meat so it’s really cost effective to add those beans, good source of protein, and good source of fiber. All right, we’re almost done. We’ve got salsa, one cup of salsa.
I’m a little wimpy in terms of flavor so I use mild but if you like your food hot and spicy you can use a medium salsa or a hot salsa. Stir this altogether and we’re getting there. You need a nice, big skillet for this recipe.
We’ve got a cup and a half of cheese. This is pre-shredded reduced-fat cheddar to lighten things up and my seasonings. You know that seasoning pack that I talked about before, very high in sodium. You don’t need to add any salt to this recipe. You’re getting some salt from the cheese and the beans and the taco shells so don’t add anymore salt. What you want to add is ground cumin and chili powder and garlic powder. So, my seasonings go in. I stir it all up.
So, after about two minutes, your cheese will be melted, everything will be heated through and you’re readied, create your tacos that all you have to do is add about 3 tablespoons of this cheesy, gooey and delicious and of course nutritious mixture right into your baked taco shells.

The one thing you don’t want to add however is that salty packet of taco seasoning mix, instead all you have to do is use seasonings right from your own home.
