Episode 46: Hearty Chicken Chili
Hi this is Amy and welcome to Eating Low. Today, we’re going to be making a ground chicken chili that’s low carb and it’s really cold outside, and it’s starting to feel like fall and winter. So I wanted something more like chili and I’m going to shop all day but this is super easy to make.
So we’ve got it in our pan right now and I’m just going to get something to push up my ground chicken with. And I’m just heating up this pallet and we’re just going to brown the chicken. And I’ve got one green pepper and one clove of garlic, you dump that there in too and I’ve got about one onion. So we’re just going to brown this stuff all together. That’s it for the first part.
After that, we’ll add in chili—I’ve got a special, it’s already pre-made chili sauce or whatever you want to call. It’s like spaghetti sauce but it’s especially seasoned for chili. If you can't find the pre-made one, then you want to make your own, just use tomato sauce, tomato paste, chili powder, and kima and you can come up with there. But I just saw that and I was like “Oh! It’s right. I’ve never tried that before” I’m just going to brown these up and then we’ll come back.
Okay so my chicken is brown, and remember chicken won’t turn actually brown like beef that’s get kind of like a beige color. So if you wait for it to turn brown I don’t know if it will turn brown. But it’s ready to go. I’m going to pour in two cans of the chili sauce. If you can make as much as you want, you can play around. That’s what great about chili is that it’s really up to you. You can add the things you like or—it’s getting big. That’s a lot of sauce. And I’m just blending it all up. Oh this looks really good. It’s really tomato. I’m hoping the can sauce comes out of here, chili is like from probably from scratch but I saw it and it just came like the perfect thing to make on like a Sunday when I don’t feel like cooking. I do shopping all day.
So I’m going to let this boil or simmer, do a thing for about 20 to 30 minutes. I’m just going to let all the flavors combine and then we’ll come back. So we made chili, got that then simmering, and cooked for really 20, 25 minutes. It’s really, it was cooked you know, I’m just letting the flavors stick in a little while. So I’ve got in a bowl, it’s really tasty. I’m going to add a little bit of sour cream and this is just the leftover sour cream I had from last week. I’m hoping it’s still okay. It’s not green yet.
And then I’m going to put a little sprinkle of cheese and I really like the cheddar cheese with chili, it’s so good. You can add whatever you want like chopped tomatoes, chopped green onions, those are good in chili too. It smells really good. It’s exactly what I need because it’s getting cold and I hate cold weather. It’s really good. You know, you can't even tell that it’s ground chicken instead of with beef or you can make it with beef, or you can make it with turkey. I actually just really like the ground chicken from all the times I made the large recipe. I’ve gotten used to ground chicken and I really like it. It’s so flavorful, really, really good so come make some of this and warm up.
