1) ...this is not how you clarify butter. 2) ...if you were going to add water, you should've done it with the egg yokes, so as to get a froathy finish. here, you're just turning the yolk into a slop consistency. 3) ...why so much butter? 4) ...emulsify? you're cooking it with butter that hot. 5) ... worcestershire is a lazy mans spice. go with the white wine vinnegar, or even a good svaginon blanc. 6) ...you managed to get the lime part right. 7) ...follow this method, and you'll be left with runny, cooked egg yolks with a smoky after taste. FAIL!!! ....on all acounts.

really you added water to the Hollandaise Sauce ?? What are you stupid and then you tell others to do it ? It was "becoming too stiff" because your butter was too hot. when it was over cooked you should have thrown it away and started again.

WTF! does this guy have any culinary clue? clarified butter is pretty self explanatory, clarified. Boiling butter is just stupid. What happened to skimming off the crap in order to clarify? Also the lemon juice should be strained, seeds are not appealing. Please if you have never made hollandaise do not use this method.

there are two ways of making clarified butter this is the fast lazy mans way, and although not the classic technique for hollandaise it is still a pretty simple way to make it especially for inexperienced people. Although I would not put Worcestershire sauce in it. I think he is substituting the peppercorn reduction.

why is the guy saying to melt so much butter when he clearly only uses half of what he melted. screwed it up pretty good thanks to the wrong info. thumbs way down. crappy video and i would nt tell anyone to see it. reading a proper list would have help alot.
