Anthony: Welcome to the Art of the Drink video podcast, my name is Anthony Caporale. And, this week is part of our AOTD on the road of November Series. I am working with my wonderful sister-in-law Nora. How are you?
Nora: Good! How are you?
Anthony: Good! And, we got Thanksgiving this week.

So, we are going to make my famous Thanksgiving Hot Buttered Cider, which is a cran-apple cider base drink that has a little bit of bourbon in it. And, you know, when we talk bourbon and order to drink, we are talking Maker’s Mark, my favorite bourbon.
So, this is a perfect drink to make after Thanksgiving meal, before Thanksgiving meal. It is terrific for the fall. The bourbon is going to help you feel a little bit less full after picking out on turkey, it is just a great drink, right?
So, what I want to do first, we are going to actually finish the drink with a dollop of fresh whipped cream. I want to go head and get that made, and I have talked about making this before on the podcast, but I have not actually shown people how to make it, so I want to do that.
Nora: Okay.
Anthony: To start with, all right so, real easy to make and I make this so ready with everytime. So, with one cup of heavy whipping cream and the secret to make in this go easy on yourself is use cold cream, put in the fridge at least over night, all right. So, one cup of heavy whipping cream into a mixing bowl and then, you want confectioner sugar, not granulated sugar, you want powdered or confectioner sugar (Confectioners sugar has corn starch added for a smooth texture). How much you put in is up to you obviously. I like about two tablespoons for a cup of cream (Optional: for vanilla cream, add 1 tsp. vanilla extract, for bourbon cream, add 2 tbsp. Maker’s Mark). So, we are going ahead and put that in there and a hand blender, that is all you need.
Now, the key here is start it slow or you are going to end up covered in cream, so I am going to start it real slow and then put it in there and then work it around very gently. And, what is going to happen is the cream is going to thicken up. As it thickens up, I will increase the speed of the blender very, very slowly.

Nora: Okay.
Anthony: Do not taste! It take long, this whole thing takes maybe four minutes.
Nora: Okay.
Anthony: For this drink, what I want to do is take it to just softer than whipped cream. I want to basically just thicken this. You could see the cream right now is starting to hold the shape of the mixer blades. So, right about there is where I want to stop. You see the cream is just fairly holding form after the mixer passes through and I am going to slow it down and then lift it gently out. That is a little soft for the whipped cream and that is exactly the consistency that I want.

This is going to serve four, so let us start with four cups of apple cider.
Nora: Okay.

Anthony: All right, beautiful, let us do one cup of cranberry because this is a cran-apple cider.
Nora: Okay.
Anthony: All right, now, it is important to use apple cider and not apple juice if you really want this to work. Terrific! Now, let us turn the stove on high.
Nora: Okay.

Anthony: But, we want to sweeten this a little and Maple Syrup is the key and use real maple syrup not the artificial stuff, two tablespoons of maple syrup.
Nora: Great..

Anthony: Awesome! All right now, here we have a stick of fresh cinnamon, six cloves and a fresh nutmeg, so go ahead and put in the cinnamon with the cloves, and then we are going to grate the nutmeg.
Nora: Okay.

Anthony: And this is just a standard cheese grater. We are going to use the fine holes and I want you to do about five grates of the nutmeg.
Nora: Okay, over the—
Anthony: Yup, right in it.
Nora: Okay, great.

Nora: Okay.
Anthony: And, I said it was Hot Buttered Cider, so let us go and put in two pats of butter.
