Hey, how’s it going? My name is Simon Cher and I am getting ready to make the best hummus and the easiest hummus that you have ever had.
This is how you start. I’m going to pour this out here. Next step, dump chickpeas into food processor. Now you want to leave enough room for vegetables and your olive oil and vinegar. So we’re going to take our olive oil. You’re going to dump it here now. You can look at the bottom here. Once you get about that much, it’s fine. Hummus is a very olive oil heavy dish. You don’t want to use too much or else it gets kind of gross and olive oily. Next step is vinegar. Again, it depends on how much of a bite you wanted to have. I love to have a lot of bite.
And now, you don’t have to use tahini. Tahini is sesame seed paste. They grind up sesame seeds real small but it’s delicious. It really makes the hummus smoother. Take a big glob of it and stick in there. That’s fine. Well I like hot peppers. I only have one hot pepper here right now but I could use five. Alright, I love spices. I’m going to cut off the ends. Those are not really that great. Then I’m going to cut them a couple pieces maybe down the middle there. You don’t need to cut it that much.
Now, the key ingredient to having good hummus is garlic. This is going to be good but I like to add something a little bit special to my hummus. So I’m going to add a couple of herbs to really bring out that kick in the hummus. Rosemary, always a good choice. So I’m just going to take it off the stem. Stick it in there. You don’t need to chop it up. Fresh basil always the best. I’m just going to rip off a chunk of basil here. You don’t need to chop it too finely. If you can give it a little chop, it will help it in the blender better. So I’m going to take this. Stuff it in the blender. Let it rip. I just want to let it blend until it’s smooth.
So you know if something doesn’t go down, you push through the middle. That’s where everything’s going to. Now sometimes if you don’t have enough liquid, it gets really thick. Toss a little bit more vinegar and it gets much smoother. Just watch this. As soon as I turn it on, it just starts blending much more smoother. Just about done, ready and benito. That is good hummus.
