Recipe for Kaju Barfi; we need two and a half cups of cashew nuts or just Kaju, two cups of sugar, two tablespoons of Ghee or clarified butter, one teaspoon of Cardamom powder, a glass of milk and silver leaves or Vark for garnishing the Kaju at the end.
Soak the Kaju for fifteen minutes. Blend the salt to the cashew nuts along with the sugar and the milk as well. When fully blended it should look like this. Heat up the wok and add the clarified butter or the Ghee. Once the butter has melted add the Elaichi powder or the Cardamom powder if you wish and now the mix that we just blended together.
Stir it around in a low fire constantly; stir until the mixture has become thicker. Make sure that it doesn’t burn from the sides. As you can see the Barfi started maybe in the sides and it’s more on the middle now.
The mixture is changing now. Now you can see it’s ready and we’ll set it in a grease pan. And just spread it out all over the pan.
Using a spatula spread the Barfi around in a plate. Let the Barfi set for fifteen minutes and then cut it into diamond shapes.
Decorate the Kaju Barfi with silver vark or silver leaves in English and serve.
