How to Make Kickin' Chicken
Stephanie: This is really good. Hi, I’m Rachel, from Junior Chefs of America and today we’re gonna be cooking our kickin chicken, also known as chicken parmegiana. So before we get started, let’s go over the rules of the kitchen, WASH. So what I’ve done so far is that I’ve laid out 2 pieces of wax paper, so that this is a nice clean working space, we’re gonna end up using it later. And then I washed 4 pieces of boneless chicken breasts. So, now I’m going to trim off the fat. Now this big white is what you don’t wanna eat, that’s the fatty part of the chicken. Just take a serrated knife, and cut and trim away all the fat. Now that we have all of our chicken nice and fat free, we’re gonna take them and pound it out, so, it’s nice and flat. What you’re gonna do is you’re gonna use your wax paper, your top layer. Lay a piece of chicken on top of it and then fold the paper over it, with just enough room so that you’re pounding space. Now, with your chicken pounder, there is the flat side and bumpy side, you should always use the flat side, when making this recipe. And so, and then pound it out. All we got to start in the middle of the chicken, make sure that you’re always using defrosted chicken. When you’re pounding, make sure you’re watching your fingers, you don’t wanna pound something of your own in there. Whenever you’re handling chicken or any kind of raw meat, make sure you always wash your hands and whatever utensils the meat touches. Let’s clean up our first layer of wax paper. I’m gonna throw this out. We’re gonna preheat our oven into 350. Now that our hand are nice and clean, we’re gonna start by coating our chicken. But first to make a nice bread crumb, we’re gonna crack 1 egg into a shallow pie crest pan and then one half cup of milk. And we’re gonna whisk it all together. Hey, that looks good out right, and here we have seasoned bread crumbs, and what I’m gonna do, is I’m actually throw in a little bit of parmesan in, on top of it. Just take one of our chicken breast and dip in our egg and milk mixture, make sure you coat both sides and then you lift it, and put it right into your bread crumbs and parmesan mixture. Get both sides nice and coated, so it’s ready to cook. If you don’t have a non stick baking pan then all you have to do is just spray a little bit of cooking spray or sprinkle a little bit of olive oil on there, just do something so that your chicken doesn’t stick, there we go, looks great. Okay, so now we’re ready to get cooking. We’re gonna take our chicken and put it in the oven, and it’s gonna take about 25 to 30 minutes to start. And they’re ready to go. Okay, so while my chicken’s been cooking, I cleaned up my work station and now I’m gonna cut some mozzarella cheese to put on top of it a little bit later. Try to fit about 8 slices of cheese in there. 2 slices per piece of chicken. Okay, that looks good. So now, we’re gonna go make some pasta to go with our kickin chicken. To make a pasta, first you gotta get some water into a pot and put it at a boil, and then add some salt in there, don’t put oil on it, because the oil makes it so the sauce and the pasta don’t come together very nicely. Just stir it up, so you have a nice boiling salt water to put your pasta, and then over here, we have just some canned tomato sauce, but at a low heat, just stir it every once in a while so that it’s nice and ready to put on top of your kickin chicken and pasta. So now that our water is at a nice rolling boil, we can put our pasta in, this is whole wheat pasta, make sure you look at the back of the bag of your pasta so you know how long to cook it for. This one should take about 10 minutes, so we’re gonna mix it around in here, so it gets soft and ready to eat. Alright, so it looks like our pasta is done. So we’re gonna drain it, make sure you put on oven mitts coz the pan gets really hot, and this is something that’s kinda difficult so you might wanna ask your parents for some help. Always drain away from you, because the last thing you wanna do is burn yourself. Streak out all the liquid, put it right back in the pan get it back on the stove, pleading for our kickin chicken. So now we’re gonna put some mozzarella cheese on top of our chicken. Be very careful, make sure you’re wearing an oven mitts when you’re pulling anything out of the oven. Let’s try to do 2 or 3 per chicken, push this back all in there. The chicken should be ready when the cheese melts, I can’t wait, it’s gonna taste so good. Now that the cheese is nicely melted and I’ve plated the pasta, put the sauce on top, we can add on our kickin chicken. Sprinkle a little parmesan cheese on top of everything. And we’re ready to eat.
