Hey, how is it going! It’s Lee Hayward here from leehayward.com. And I’m with my lovely girlfriend Patricia. And what we’re going to do right now is we’re going to make one of our favorite treats high protein, low fat nachos.
So, we got some lean ground beef that we’re going to cook off. We have some low fat chicken bacon and vegetables and we got mushrooms, red pepper, onion and baked nacho chips. So, these are low fat chips and this is going to be the foundation for our nachos. Fat free cheese slices, some sliced olives. So, what I’m going to do is basically just chop out all the veggies and cook the beef. And how am I going to cook that is in the wok and what I’ll do is I’ll actually boil the meat in water. And then just strain it off and strain it afterwards. So, it gets even more the fats out of the meat eventhough it is are a lean ground beef. I’d still want to get much fat out of it is as possible, so I’m going to boil it, strain it off and let’s say we put together our low fat nachos. So again, this is a really tasty treat. What is good is you know the greasy type of nacho is you would get you know, in the restaurant or whatever you’re in. But again we’re kind of know a lot of the fats, a lot of the junk and we’re making it a healthy version.
All right, first thing I’m going to do now is cook the meat because that’s going to take the longest. So, let’s put it on medium heat. And I’m going to pour couple cups of water. Excuse me. Now, just put a couple cups of water in the wok and boil the meat in the water. And this is a great tip if you’re not doing this already with your ground beef or whatever, you should boil it first and then strain it off. So, you’ll get a lot more fat out of it. I’m going to put couple packs of beef probably couple of pounds because again, I don’t mind if we have some leftovers. I usually cook our food in bulk rather than just preparing food for one meal at a time. I very often cook up a lot and then have some available for leftovers. So, I’m just going to mix this up here and boil it, cover it over and have it boiled in the water. Just put on medium high heat and just put the lead on it. All right, so that is it.
Now, we get the cutting board and we need to chop up our vegetables. And I can give you a little tip when you are chopping up peppers to make it really easy, like a lot of people you know slice up the pepper and then you get the seeds in the middle and all that. A little tip that I got and I got it from cooking show of all things is just to cut the top right off the pepper just like that. Then what you’re going to do is just scoop seeds out in one big thing, just pluck them out same with the top just pluck the escargot, here we go. So now, I now have the pepper, no seeds whatsoever. Simple, easy, that is the way I would like to chop up peppers.
And again, when it comes to the toppings, you can put whatever you like, I mean you just happened to run red peppers, onions and mushrooms here tonight. But if you wanted to put anything else, different types of pepper, different types of vegetable topping, feel free to do so. Olives go along with it as well. So, what I’m going to do now is just wait for the meat to cook.
Okay, I’m back. Now, I got this all done. The beef was drained off and like I said, put in some spices in with it. Again, when it comes to spice, you can put whatever you like. We put a bit of salt, pepper, or some salsa and stuff like that just give it a little bit of flavor. Veggies all chopped up, looking pretty here. And we chopped the chicken bacon. Now again, for the sake of video time here, we did it off camera. Heated it up in the microwave, cooked the bacon on and then chopped it up. I’ve got the olive oil ready to go. Some fat free cheese slices. So boom, we’re going to get this show in the road.
So, we have the low fat chips and some pour them on the cooking sheet. So, you put the chips laid out. And I’m just going to spoon on some of the meat over the top, spoon it all up or it looks like I’m going to have some leftover meat here. I’m not going to be able to use all this meat on the nacho chips. But that’s why I have some for another meal later like I mentioned earlier. I have leftovers here. Okay, so there is the meat, I’ll spoon it on. Now, we could put on some veggies. Again, just sprinkle it on and like I said we have mushrooms, onions, peppers.
All right, so we got all of the veggies and the meat and everything just laid out on the nachos. Like I said it looks very good they are now as is and you can tell this is going be a very healthy nacho meal. And what I’m going to do now is put on the fat free cheese slices. So again just a quick recap, baked nacho chips. We got the ground beef which was cooked and drained and then spiced up afterwards, put that on. Low fat chicken bacon that was cooked and chopped up put on, all the veggies, the mushroom, onions, peppers, olives that all sprinkled in there. So, this is good. I’m getting hungry just looking at all this. And now, I’m going to put on fat free cheese slices over the top. And what I will do then is just put it in the oven in a couple of hundred degrees or whatever, probably 300 degrees and just put it in there until the cheese melts over all this. So, I’m going to just cover it all over with cheese. And then once the cheese has melted then it’s good to go. Because like I said, all the meat and everything else was cooked ahead of time. All right, we got it all ready to go. As you can see the cheese is put on the top and I got the oven already preheated to 300 degrees, so I am just going to lay it in until the cheese melts. Just put it in there on the middle rack and this usually may take you know five to ten minutes that range, keep an eye on this. I mean I’m not going to leave, I’m just going to keep.
Okay, our nachos are all ready. I see the cheese is melted over the top. This is looking good and smelling better. Just lay it there. Okay, that looks great. Will you just come in here and look. So, like I say that all the cheese has melted over the top and this is ready to go right now. So we got a—like I said it’s blending the gray area here a little bit. We have high protein and relatively low fat because all the ingredients we picked you know like the baked chips, lean beef that was strained off and all that stuff. And also I mean we’re kind of you know, in that gray area where we’re still getting a healthy meal but getting a lot of taste and flavor as well.
Now to go along this for our toppings, instead of you know, we’ve kept a little fat and everything else with our meat and chips. To go along with this, I am going to have some—instead of using sour cream, use plain yogurt. That is one of my favorites, I mean plain yogurt. You know, you can dip your chips in that in there. And so use that and place the sour cream and also we have some salsa. Salsa means naturally no fat. I mean it’s just chopped up vegetables and something like that.
