How to Make Milehigh Quesadilla

To make the Milehigh vegetable Quesadilla, you have to preheat the oven to 400. First, heat one table spoon of olive oil in a large skillet. You want to add half of it and then I slice the sweet onion. Heat the oil, then you’ll add four ounces of thinly sliced cremini mushrooms and then you add two julienned carrots, and then add thinly sliced red or green bell pepper and one julienned zucchini and then two cloves of garlic minced. Stir the vegetables for about five minutes until they’re soft and tender. And now the vegetables are ready so let’s assemble the Quesadilla. I'm going to make four stacks of tortillas. First, you start with a layer of vegetables on the tortilla and then you top that with the layer of cheese and then you will take another tortilla and place that on top with one more layer of vegetables and then add second layer of cheese, and to top it of one last tortilla on the top.

The Quesadillas are stacked and ready to go. I’m going to go ahead and put them in the oven at 400 degrees for about 15 minutes until the cheese has melted and the stacks are hot. Spend about 10 minutes and I’m going to check the Quesadillas now. The cheese looks melted so I’m going to go ahead and take them out off the oven.
