Hi! I am Sarah from Simply Sweets by sarah.com. I am here today to help you bake without actually baking. Now we are going to make my famous Peanut Butter Crispy Balls. They are a great treat for any occasion, and kids love getting messy making these great, great yummy peanut buttery goodness.
First, we start with about two to three cups of Rice Krispies, any brand is fine. We are going to dump these into a really big mixing bowl. Over here, like I showed you before, I have some peanut butter softening. Now we have a great liquidy peanut butter, just the consistency we want for the peanut butter balls.
Turn off my heat, and I am going to slowly, very slowly, because we don't want the Rice Krispies to get mushy, pour the peanut butter in, stir as I do it. Now, all the peanut butter is going to go into the bowl. Once you have got the peanut butter in and the Rice Krispies are nice and coated; move this off to the side, we are going to add about a quarter to a half a cup of confectionery sugar, otherwise known as powdered sugar. Careful with this with the kids, they will breathe it in, and sneeze, makes a big mess. So we are going to dump some of this into our bowl.
Now, for my last touch, which I said I always add in my desserts, is a little bit of vanilla extract. If you are actually going to measure it out, it's about a quarter teaspoon. Now again, this recipe does not have to be exact. It's one of the great things, one of the few times you will find a baking recipe that you don't have to worry about your measurements. If it seems like it's too liquidy, you have a little too much peanut butter, throw some more Rice Krispies in there and you will be good to go.
If you have some trouble when you are balling them up; which I will show you in a few minutes, then you want to moisten your hands and use those. And then when you moisten your hands and use it to make the peanut butter balls, they don't stick as much.
Okay. So now, this is the kid's favorite part. I am just going to completely crush the Rice Krispies in my hands. I am coating my hands in peanut butter, Rice Krispies, and powdered sugar. Everyone wants to get their hands in there and make a nice big mess. Make sure you wash your hands before you make any of these treats. We don't want the germs that we carry around to go into our food.
Now, mine looks a little bit liquidy, so I am going to add just a touch more powdered sugar into it, because it still has that really brown color of peanut butter. You want to lighten the color up just a tiny bit. So with my peanut buttery hands, since we are going to wash the bowls anyway, I am going to dump in some more powdered sugar.
Well, you know you have a great consistency when you can take part of your batter and create it into a ball. But what I am going to do from this is pull off small pieces and roll them in between my two palms, in a circular motion, press it together a little bit, kind of like you are playing with play dough when you were a little kid.
Now, you can vary the size of these depending on what you are serving. If you are having a fancy or a high-end evening with friends, dip them in a little of the powdered sugar, make them a little bit larger, and they look like a fancy truffle. Okay. Now, another great way to make these, especially when you are feeding the kids or your chocolate fans, make them a little bit smaller. I will show you the size, but I am not doing the chocolate now. Make them a little bit smaller, melt some milk or dark chocolate, the way I melted the white chocolate, and dip them in. Pull them out and put them in the fridge, and you have beautiful chocolate covered crispy peanut butter balls.
For now, we are just continuing with our larger ones and we are going to keep dumping them into the powdered sugar. Throw them in the fridge, so that they keep their shape and harden up a little bit, and then everyone can enjoy this tasty treat.
