First, we’re going to start by pre-heating the oven to 400 degrees. So today, I am going to use broccoli for the vegetable pancakes and you can use any seasonal vegetables that you like. I’m going to start by adding a little bit of water, about a half an inch to a pan to steam the broccoli. And then I’m going to cover the pan and I want the broccoli boil probably absorbing most of the water for about 10 minutes.
So long with the vegetable pancakes, we’ll be making fruit pancakes as well today. I’m going to be using a pear or actually three pears. And first, I’m going to start by peeling the pears and then we’re going to slice the pears. Get one tablespoon of the butter and place it in the pie pan, each of the pie pans. I’m going to place each of the pie pans into the open while the oven is pre-heating just until the butter melts. So, the broccoli should be steamed by now. I’m going to turn off the fire and take the butter out of the oven.
I’m going to just roll the butter around the pan a little to grease the bottom of the pan. Place the pears into the pie pan in one of the pie pans and put the pie pan back into the oven and bake the pears for 10 minutes.
Now, I’m making the butter for the vegetable pancakes. First, I’m going to start by adding two thirds of a cup of flour to a bowl, two eggs, three quarters of a cup of milk, quarter teaspoon of salt.
Now, I’m going to mix or whisk, you can whisk it or mix it until the butter is smooth. So now, I’m going to add the broccoli to the pie pan.
I’m just going to pour all of the butter right on top of the broccoli. So, I’ve made the fruit pancake butter just like the vegetable butter. Now, I’m going to sprinkle about two teaspoons of sugar over the baked pears. Now, I’m going to add the butter over the pears.
So, I’m going to put them in and bake them for 20 to 25 minutes until they’re puffed and golden brown.
So, the pancakes already I have taken them out of the oven, they’re nice and golden brown. I’m going to take some Swiss cheese and grate it on top of the vegetable broccoli pancake. And while it’s nice and hot, the cheese will melt. Great, so you have to try this. It’s my favorite.
