What is up (foreign language) my name is Angeli. Welcome to Thai Foodcast. Today we are going to make Pad Thai. Pad Thai is the secondary food of Thailand. Usually it is the first Thai food the western people try. And, today we are going to teach you to make real Pad Thai in your own home. Let us do it.

These are the ingredients that you are going to need to make Pad Thai. Half pound of rice noodle, it is also called a rice stick. You need to make a trip to Asian food stop to get it, six medium sized shrimp. This is palm sugar, it is made from the sap of palm tree, it is different than the regular sugar because it has a good smell to it. And, you have to make a trip to Asian food store to get it. One tea spoon of ground chili pepper, one cup of bean sprout, three cloves of garlic.
This is tamarind sauce, it made from tamarind fruit and it tastes like sour raisin, and you need to go to Asian food store to get it. Quarter cup ground peanut, half cup of chive or green onions, one quarter cup of small dried shrimp, and you need to go to an Asian food store to get it. This is namH bplaaM or fish sauce. It is made from fish and salt. Every house in Thailand has it, and we use in almost everything, and you can buy fish sauce at just about any supermarket, half cup of firm tofu, four tablespoons of cooking oil, two eggs, a quarter cup of water.

First thing you need to do is soak the noodle in a hot water, 15 to 20 minutes until it soft. Chop the garlic, chop chives into one inch pieces, chop peanut into small pieces, dice it tofu into a small cubes.

The most important part of Pad Thai is the sauce. So, we are going to make that first. We need a sauce pan and turn your stove to the medium heat. When the pan is hot, add tamarind sauce, and then fish sauce, then add palm sugar. Stir it all together. When it boils, remove from the heat and it is done. Now, we going to need a big wok to fry the noodle and turn on your stove the high heat. When the wok is hot add oil. When the oil is hot add garlic, and fry garlic about one minute but do not let it turn to yellow or brown.
When the garlic is ready add tofu. And, the dried shrimp. Stir it together about 30 seconds. Next, add the fresh shrimp. Fry until the shrimp is pink and cook through. When the shrimp is cooked, reduce the heat to medium. Now, add the noodles. And then, add water.
The water helps soften the noodle. Now, it is time to add the sauce. Stir it all together. Next, add the egg. And, stir it all together. Next, add ground peanut. Then, add the chili. Now, add bean sprout, and the last thing, add the chives. Stir it all together about a minute and you are done.

In Thailand, Pad Thai usually serve with the fresh bean sprout, chives, lime, ground peanut and chili pepper. So, people can add things to their taste. This was to be a make about two portions.
