How to Make Papa a la Huancaina
Female1: Before we join are friends and family for the meal, we have one more dish to prepare it’s a very popular dish from the mountains.
Female2: From the mountains where you can eat everywhere in Peru.
Female1: What is it called?
Female2: It’s called Papa a la Huancaina
Male: Papa a la Huancaina, is named after Juan Quio a city in northern Peru, chilled potatoes are covered in a creamy spicy sauce made from Queso fresco or fresh cheese and ahi amario a spicy pepper used frequently in Peru in cooking.
Female2: It’s called Huancaina because it comes from Juan Quio which is a city in Peru it’s sort of close to the mountains northern mountains of Peru.
Female1: And what are the ingredients?
Female2: The main ingredient pretty much is ahi amario.
Female1: A special kind of pepper.
Female2: Yes it’s a yellow Peruvian pepper its sort of spicy can be very spicy, you can make it less spicy soak it in water for probably overnight and this is one of the main ingredient, then we have queso fresco which is Spanish also Peruvian white cheese and we have some garlic, milk because what going to make is some sort of a sauce.
Female1: Do you make this differently in America that you would in Peru? Or this is exactly what you would find in Peru?
Female2: It’s the same I mean we can find the ingredients that are actually in Peru like not fresh pepper they come in jars or frozen but then this not a Peruvian cheese its from Mexico but its sort of the same.
Female1: So it’s a little bit the same?
Female2: It’s a little bit the same.
Female1: Hard to get the right ingredients.
Female2: Exactly.
Female1: So how do we make this?
Female2: Okay we got a blender that’s how you make a sauce in a blender we going to add some oil and then were going to add the pepper.
Female1: And do we all put this in together? Or do you have to make it in stages?
Female2: You could make it in stages or put it all together its really up to you.
Female1: That’s pretty easy.
Female2: I got roasted garlic.
Female1: Oh you roast the garlic first?
Female2: I do it for my own you can put fresh garlic or roasted, then got the cheese.
Female1: And these are very salty dense cheese?
Female2: Yes.
Female1: It’s very delicious, I sneak a little treat.
Female2: And then we got the milk, its about two cups but you can go as what you think you need then you just blend it.
Female1: Oh it’s pretty easy.
Female2: Yes I’m going to show you how we serve it.
Female1: Right over some prepared potatoes?
Female2: Yes we put some boiled potatoes it can be fried also but the traditional way, is boiled and just pour it this way.
Female1: It looks a little bit like a holiday sauce?
Female2: Yes.
Female1: It has this rich creamy.
Female2: And then olive.
Female1: Alright perfect were ready to eat lets go join our friends.
