How to Make Pasta with Roasted Tomatoes
Prep time: 15 minutes
Cook time: 35 minutes
Ingredients:
1 lb penne pasta
3 pints of grape tomatoes, sliced in half
3 large cloves of garlic, sliced thin
½ cup fresh chopped basil
½ cup olive oil
Grated parmesan cheese
¼ tsp dried red pepper flakes
Salt
Pepper
Balsamic vinegar
Missy: Turn the oven to 350 degrees. And you want the oven on the
middle rack. I’m just going to put it on for pasta, and put a little
salt in there too.
So I’m going to take the tomatoes, toss in garlic, my red pepper
flakes, and tablespoon of balsamic vinegar. Put half a teaspoon of
salt, this is coarse salt, just to flavor, just to taste. Cover them with
olive oil and then I’m going to toss it on. And when it’s nice and
coated, I’m going to lay it out on a rimmed baking sheet. Just lay
them out in one even layer, and in they go.
The water is boiling for the pasta. I’m going to add that now.
We’ve been roasting this for about 35 minutes and they look good.
See the skins are kind of puckered, the juice is bubbling. They’re
not really brown and the garlic is a little golden on the edges like
right here. It’s not burned. Then we’re going to let them sit for
about 10 minutes. Perfect.
Loosen tomatoes from baking sheet, pour tomatoes over pasta.
And I’m also going to take that basil.
Mix, add pepper to taste. Add parmesan cheese.
