How to Make Penne Gorgonzola
Penne Gorgonzola with Dana

Ingredients:
1 lb penne
1 large onion
1 shallot
2 cloves garlic
3 tbsp olive oil
White wine
1 cup cream
6 oz gorgonzola
2 boneless chicken breasts
Grapes
1 cup of walnuts
So, what I am going to do is baked the chicken but first, just kind of make an herb butter.
Rind some pepper in there. Grab the butter and kind of start to just mush it around. So, I
am going to take the herb butter, rub my chicken with it. I am going to put the chicken in
the oven.
So, I am going to chop up my onions, garlic and shallots. I am not chopping all the way
through, I am leaving this intact. I am just going down to about right here on the onion.
So, I am going to cut it longways and I am going to turn it half a turn counterclockwise,
clockwise like so. Once again, I am not cutting all the way to the end. So now, you kind
of have your onion like this. You will just flip it over on its side and just chop away.
So, I am going to transfer these into my wok. I haven’t heated it up yet but I am going to
put some extra virgin olive oil in here. I am just going to do a quick chop. I will make it a
nice and thin layer like that. Garlic is I think one of the hardest things to peel, so the trick
I use, I just kind of smash it down like that and it makes it really easy to peel, just make
sure you have a nice mince going on.
You just want to stir to make sure that this whole mixture has some oil on it. You do not
really want to burn your onions. Mix them slightly. This is a pretty dish. While this is
cooking, when it looks like it’s sweated a little bit, that is the point which I add some
white wine. I will just add a 1/4 of a cup.
I’m going to check on the chicken. It looks like it is about done. It might still be a little
pink but we’re also going to be cooking it in the sauce, so that is okay.
Stir this in, maybe about a cup of the cream and to add some of the gorgonzola. What you
are going to do is eventually melt the gorgonzola into the cream sauce.
We are just going to julienne these. I might even just cut this in half just to make it
manageable when you are eating the pasta.
So now that my water is boiling, I am gong to add the penne pasta. You do not want to
overcook it because you’re also going to be adding it to the sauce. Now, I am going to
add the grapes, couple of handfuls. I’m going to cook these for three to four minutes. So
now, we are going to add the chicken that we cut up. I am just going to put that it in there.
We are going to add the walnuts as well, about a cup of walnuts.
Now, people might ask questions about the grapes but you shall see, they really cut
through that heaviness of the cream.
After you strain it, you’re just going to bring it right over and dump it in. Get all that
sauce covering the pasta.
