Merry Christmas and Happy Holidays, we are getting ready for the Holidays. And we are preparing today a very special dish for one of our Reindeer – you think its Rudolf don’t you? No, today we are doing Prancer’s peppers – one of his favorite dishes and when your family will love too.
Okay our first step is we’re going to cut the tops of it the peppers, kind of like a little cap. You may need to rinse the red ones out a little because some of the seeds like to hang out in there. So it should like that, we have all six peppers cleaned out empty. And I am going to steam these just for five minutes. I put one half cup of water in the bottom of a microwaveable pan or bowl.
Now this one has a top, which I will use, and you can use just a paper plate over the top. Now we are going to put the peppers into the baking dish, we’ll put the little leaves over here for a moment. And we add a cup and a half – I might have to move this a little of our sauce.
Our next step is we are going to saute the turkey and add my zucchini that has been diced along with my onions and my garlic minced. While this is cooking, I am going to add a half of teaspoon of cumin, one-half teaspoon of cinnamon, one-half teaspoon of salt, one half teaspoon of pepper. Smells good, this should cook for about seven minutes - you want to saute the turkey until it is no longer pink and the vegetables are almost tender. Remove from heat we are going to add one tablespoon of sugar, apple cider vinegar and we add our raisins.
Stir this up and we’ll add the remaining sauce. Now what I am going to do our peppers, these are going to look so festive. What I will do now is spoon the sauce into the peppers very carefully. These looks so festive, then we are going to replace the little caps. Santa will love these and so will Prancer.
Now we put just a little bit of olive oil, now if you are going to bake these or serve this right away. You can store them – under, seal them and store them in the refrigerator for up to two days. So you can make this ahead, bake it 400 degrees for 30 minutes.
