I’ve already shown you how to dry herbs and I’ve already shown you how to preserve basil and parsley to use in recipes all winter long.
Today I’m going to show you how to make amazing Pesto Sauce using fresh basil from your garden. To make pesto sauce you need fresh basil of course, I’m here clipping some of my Genovese basil the aroma is just amazing. Now you're going to want at least two cups of basil. Over here, I have parsley and I’m going to take some of this parsley too into my kitchen. Over here, I have got lemon basil it is so delicious if you’ve never tried different varieties of basil definitely considered growing lemon basil.
All right I think I have enough here so I’m going ahead and fly to the kitchen and show you how to make delicious fresh pesto sauce using ingredients from my garden.
We’re here in my kitchen and I’ve got all of my ingredients ready to make some amazing pesto sauce. First thing of course we need is garlic, you want to use at least one whole clove. Pop it in, you also want some pine nuts and I’m going to use about a half a cup of pine nut. I have one of these Cuisineart Processors I’m going to pulse that a little bit.
I’ve got that great lemon basil now I’m going to use the Genovese basil. All right that’s enough basil for now I’m going to add my parmesan cheese next. I am going to add about a cup next we’re going to start putting in the olive oil and you’re going to want to use about a cup but this is kind of where you’re eye need to take over and you just want it to be a really creamy consistency.
What’s happening right now all the ingredients are combining and as you’re pulsing you’re emulsifying the olive oil. Which mean you’re getting air into through it and fluffing it out and just mixing all the flavors together. See if its where I want it to be, oh, yeah, we got it like there. Look at that that is just perfect.
Slightly fold up or stirring it. It’s not too thick, it’s not too thin I’m going to taste it, it’s delicious you know what I need some salt and pepper. I am going to move everything over here and serve my belt up some pasta and some pesto sauce just add the pesto to you’re bowl here or you can ladle it out individually depending on how much pesto sauce you're family like. I like a lot of pesto sauce in mine of course, I like a lot of a lot of things.
Now I’m going to take some parsley, I’m going to add it, as a little garnish. That’s so good, so good, in fact I just tasted a little bit of lemon, lemony flavor. Definitely try this recipe at home, the more times to try it the better you’ll get at it and you know you can use this pesto sauce as a dipping sauce, you can also add vinegar and make it a vinaigrette.
And now that you know the basic ingredients of pesto sauce, you can substitute or add parsley you can add so many different types of herbs.
