How to Make Pesto Sauce
Welcome to Hoffmankitchen. Today we’re going to make pesto. Pesto or pesto sauce is a
great summer dish but if you can get fresh basil, that is the key ingredient. You can make
it any time. It is one of the simplest things to do so, spare yourselves a lot of money. You
don’t have to go to supermarket to buy it or in a deli shop. You can make it yourself.
All it takes is the ingredients and a good blender. And we can—we’re going to make the
pesto sauce and we’ll have another recipe for pasta pesto so I hope you visit that as well.
So the key ingredient is the basil. I have washed the basil, dried and it's about two cups,
actually more than two cups, generous cup of basil. And I used the old fashion Cuisinart,
any food processor will do it. We’ll put two cups of basils into the food processor and
one cup of shelled walnuts. And I crushed about four to five garlic cloves, depends on
what size you have.
And we’re going to now quickly process this. Now we’re going to add on one cup of best
olive oil. Try to go to a nice store or your favorite store, the best olive oil you can find
and we’re going to put the blender on and slowly process or drop in the olive oil into the
sauce. Let’s see. Well let's see. Oh, that looks great. We’ll just get it off the walls here
and the next step, what we’re going to do, we’re going to add on one cup of parmesan
cheese. It's fresh grated parmigiano cheese, a quarter of a cup Romano cheese also fresh
and grated. We’re going to add on about a half a teaspoon of salt and a very generous
grinding of pepper. I would say this is about a half of teaspoon or three quarters of a
teaspoon.
And now we’re going to reprocess it. Okay, that looks absolutely perfect and here is our
pesto sauce. We’ll just add a little touch of basil here, just to make it look pretty. You can
refrigerate it and use it for different dishes. Our favorite dish is pasta pesto and if you
