How to Make Pesto in a Food Processor
To make pesto in a food processor, first add the garlic and pulse until fine. You may need
to scrap down the sides. Then add the pine nuts and pulse again until you reach this
consistency. Next, add the fresh basil and grated cheese. Pulse until you reach the desired
consistency depending on whether you like a chunkier more rustic pesto or smoother
pesto.
I'm going to stop here as I like a more rustic pesto. You can add the oil by pouring it into
the top of the food processor but it will continue to puree the ingredients even finer. By
placing the mixture into a bowl and then adding the olive oil, it will maintain its nice
texture. Add as much or as little olive oil as you like. Just taste for seasoning and it’s
ready to use in your recipe.
