Pilaf Rice with Vegetables and Saffron
I want it first all about what to make this evening like for dinner with a non meat item. I thought about making a little rice with some vegetables and I have to make me a collection in the refrigerator and the cabinet, I find that it is going to be vegetables with rice and this is the just the picture of all the items that will be used later on. I will give you the amounts of everything. Two things which you should have in the kitchen and one of them is a scale.
We have four ounces of broccoli. How can you convert this into how many cups? It’s very difficult. Okay let’s scale, everything is weighed, there are no questions. Certain vegetables we will be steaming for this dish and others we’ll be sautéing that will be cooked with the rice.
Since it is broccoli and green beans cook—taken on the same amount of time to cook, we’ll put them in the steamer, raise it up, this will take a few minutes. All the vegetables could be sautéed together but you know what? When you steam them, you get less shrinkage and they only use fresh—fresh green beans, fresh broccoli, please do not use frozen. Everything is fresh in this recipe.
Just about when you think the beans and the broccoli are done, you do not have to use your fingers and take one of these items come in very handy, stainless steel rod and you just push. If it goes through the broccoli stem easily, it is done. If you have force it, wait a couple of minutes. When that’s almost done, we are going to throw in the zucchini being such a watery vegetable, it only takes about a minute to cook, and later on when it’s formed into the rice, it should be nice and firm. Ah the vegetable are very nice—al dente and I will throw the zucchini in. Remove the steamer basket set aside and wait till later when the rice is finished everything will be folded together.
Now we’ll add the sea salt and the sun dried tomatoes. And now we are going to add the rice. I have added two cups of California style rice, I could use Uncle Ben’s but this is what I have on hand at this moment. From the two cups, now we will add three cups of chicken stock.
