Our new Fix goes to Salvina, all the way from Malta; that's an island off the coast of Sicily, wrote me in a fix for plum cakes, says she has no clue how to make it and need some help. Don't worry Salvina, got your plum cakes coming right up.
Salvina, the first thing we need to do is beat these egg whites, so they form stiff peaks. Next we are going to set them aside, and to follow, we are going to cream together the sugar, butter, and lemon zest. Once our butter sugar mixture is combined, we are going to add in our eggs until they are completely combined. In a separate bowl we are going to mix together this baking powder and flour. We are going to beat that right in.
Next, we are folding in our egg whites, and don't forget to grease this plum cake with a little butter and flour. We are going to pour our batter right in there. And to go on top, we are going to slice up these beautiful plums. Spread them out on top. We are going in the oven 375 degrees, for about 40 minutes.
Man, Salvina, this thing sure did blow up, but that is just fine, it won't affect the flavor. We are going to let it cool, come back, plate it up for those fresh plums right on top.
