Speaker: Pork chops and applesauce, been there done that, then try our chops served with sweet potatoes and sautéed apples for a twist.
First, start by assembling the vegetable mixture, peel and core two medium apples. You will need about a quarter cup of onion, chopped with a metal blade.
Next, switch to the shredder and shred three medium sweet potatoes. Add the apples. Now, cook four slices of bacon over high heat until crisp, and drain all but one tablespoon of the fat. Cut the bacon into pieces and set aside for now.
Next, rub the pork chops with lemon juice, and season with salt and paper to taste, and brown them in the bacon fat.
Drain all the fat except for one tablespoon and deglaze it with bourbon, if you like.
Next, add the sweet potato, apples, onions, and cook for five minutes, stirring. Now add a quarter teaspoon of salt, and eight of a teaspoon of pepper, and eight of a teaspoon of nutmeg, and a quarter teaspoon of chervil and mix well.
Place the vegetable mixture in a greased oven pan, and then arrange the pork chops on top of the mixture. Sprinkle with the pieces of bacon and chopped parsley. Cover with foil and bake at 350 degrees for 50 to 60 minutes, until the pork chops are tender.
