What we are going to do today is to take the humble little potato, a couple of simple ingredients, jazz it all up and make a really interesting side dish to go along with any meat or fish.
So, you will need two large potatoes, a couple of shallots, a little bit of fresh thyme leaves, sea salt and black pepper which you will have for most recipes, a little red chili, some garlic and some fresh spinach which we will add at the very end.
We will start by peeling the potatoes. Also, wash them. Give them a really, really good wash. And, what we are going to do is we are going to chomp this actually into uniform little sizes and we are really going to—it is quite an exciting little vibrant dish that really brings potatoes to life. Sometimes, you can just get bored of this and mash or chips, etc. It is like putting a whole new slant of it.
Tonight, we have the lovely peeled potato. We are just going to chop it into square shaped. What this means is if you are actually going to have quite a bit of waste on the potato, it will all become very clear in a second. You want to find the perfect little square or something like that.
So instead of throwing those away, you could just roast those simply, you can turn them into the pot, save them up and make some mash or we donate them for this recipe. Now, just to show you, I want really uniformed little squares. Now, we are going to put these potatoes in quite a unique and it is very important that they are all in the same size because they will brighten up uniformly and they are really even fully cut. So, straight down the middle. That is why we want a nice big potato as well so that you can get that lovely and perfect sized squares. So now, if you look at those, those are all exactly the same size. That is really crucial. So, I will do that with the other potato and then we can start to chop off the flavorings.
So, the flavor of this potato is that we are going to find it and we are going to add in some really fragrant ingredient, thyme leaves. Just picking the leaves off the stalks. Thyme really is nice and aromatic. This one actually got a sort of a lemony thyme flavor of it so that is going to work really well with these potatoes. Now, the potatoes are chopped really, really precisely. But, this is quite a rustic dish. The rest of the ingredients, we are just going to chop pretty roughly and sauté them off. The best thing about these ingredients that I am using is that they really do have strong robust flavors that are going to work well with those potatoes. So, the shallots. We have also got a red chili. We are just going to take the end of it. And basically, we are going to take those seeds out because you do not want to roast them hot. We just want a little gentle heat. So, just gently run your knife along the back of that chili. Be carful to remove any of the seeds. If a couple stay in there, it is not the end of the world. And again, nice thin strips. The chili is not only going to bring really nice heat to this dish, it is also going to bring some lovely color and this is actually a bigger chili. So, it is not actually even that hard for one. It is closer actually to pepper. So, we will do that for both of those.
Last of ingredient, one of my favorite, a really, really strong garlic in that. We are going to be quite generous to this. A couple of cloves. So, you can see with this garlic here, it is actually perfect. Those little red things that you see along it, that means that it is absolutely perfect and ready for use. So as usual, we are going to bang it which removes the skin and just a rough chop again.
The dish is starting to take shape now. We got all the ingredients pretty much ready to go. Roughly chopped garlic, your shallots, your nice chili, the thyme leaves. I am going to show you how to bring all that lovely flavor into the potatoes and end up with a lovely, lovely dish. So, let us cook it.
Cooking these potatoes is a tricky thing. Well, not tricky about so. I gave it 3 minutes but it is an unusual process. People think that you need to boil them or roast them. We
