We are going to do some quail egg canapé with some smoked salmon.
I have some nice brioche which I am going to slice with a serrated knife, a quarter inch thick. I’m removing the outside of the bread. Brioche is made with flour, yeast, a lot of butter, a lot of sugar and some eggs. And it’s really delicious bread. I cannot have breakfast without it really. I have a cookie cutter, and I am going to make a hole in my brioche, and that will help to quail egg to get stabilize in it.
Now I am going to put some oil on my tray. I have some aluminum foil, it just need to be oiled. It will prevent the brioche to stick to the tray. I am placing all the brioche, like that to my tray.
And now we are going to take care with the quail eggs. A quail eggs really taste slightly sweeter than a chicken egg, but it is very similar in texture and very similar in flavor. You need a very sharp short knife to remove the quail egg from the shell, so you just make a little hole. And then, with the knife kind of cuts the top. We are removing it like that. You have to make sure that you don’t leave any small pieces of shell. And I am going to separate the yolk from the white and then bring it into my bread just like that. We are going to do another one. As you see, I’m making a little movement with my knife like up and done like that and that helps to cut the shell. Take the top off. Quail eggs are very easy to find in markets. Also you can get it on the internet.
The brioche is going to go to the oven for aboutone minute, one minute and a half. And then we will remove the eggs and top it with small salmon. The quail eggs should be ready. You see the bread is nicely toasted and the quail eggs are barely cooked. The yolk is still running.
I am going to use some smoked salmon and make a roll like that on top of it. And that can be done on the last minute of course. You do not want to bake your smoked salmon with the quail egg because it will become salty. When you warm smoke salmon, the salts comes back very strongly, so you do not want to bake it with the quail egg. Maybe a little piece of chive just to make it fancy, just like that. If you do not have chive it is okay it just makes it more elegant. And then with this spatula, we are going to remove the toast. Okay. You add a little bit of salt pepper on it, and it’s ready. Quail eggs, brioche, smoked salmon. With toaster oven two minutes, a delicious canapé.
