Eric Ripert in Get Toasted
We are going to make the Raspberry Clafouti. A clafouti is basically, a crud butter which is toasted in the oven and we are going to add the raspberry unit.
First, I am going to break an egg and make it very frothy, you just have to whisk it like that. When you have this kind of froth on top, this kind of foam, it is ready and you just have to add your sugar, and half and half, and vanilla extracts, just stirring it up a little bit more. You can see, it’s very simple, very fast. Now, I’m adding the starch or the flour. And it is important to put the flour on the other end so in that way, you do not overworked the flour and the Clafouti would not be rubbery.
When it is all mixed together, I am going to use the grotten molds, brush it with a little bit of that will prevent the clafouti to stick to the mold. I am going to add some sugar in it making sure I apply it everywhere.
I have some beautiful raspberries and I am going to put them inside my platters all over. Some of the butter goes on top and I barely cover it. The toaster oven in ready, it is about 400 degrees and they are baked, and we are baking for about eight minutes.
Eight minutes later, it’s ready. Look at that, it’s beautiful, gorgeous. Very nice, very simple!
Raspberries, toaster oven, eight minutes and an amazing dessert, this one is really good.
