How to Make Raspberry Gazpacho

Hi, I’m Chef Phil Anderson, Aristotle’s executive chef. And we’re going to make a raspberry gaspaccio using fruits instead of vegetables. I’ve got a 10-ounce bag of organic frozen wild raspberries. I’ve got a pint and a half of the fresh raspberries. Four leaves of mint that I chaffonad. Some lime juice, 3 tablespoons of lime juice. And then we have a cup of each pineapple, cantaloupe, and honeydew. We have seltzer water too. To get started, we’re just going to puree the raspberries together and then we’ll pour into the bowl. Add the other fruits and the liquids. And it will be as simple as that. So let’s do that. Put raspberries, we’re not going to use all of this. And I will use all of this. And then we cut this open. Ten seconds in the blender. You can take a spatula to clean that up. And then we’re going to put the liquids in and then the other fruits. Okay, next step is to grab a spoon. Stir that around. I’m going to garnish this with this mint. There you have it, raspberry gazpacho. Enjoy.
