Our new feature fix of the day goes to Mark of Chicago, Illinois. He submitted a recipe fix to us for Ratatouille. Mark let me tell you something Ratatouille is not some boiled eggplant, squash together. Don’t worry we are going to fix you right up.
All right Mark, the first thing we got to do is prepare these vegetables so I’m going to roll up my sleeves here. And you know what we’re making French food. I got to hear that—change this music up will you? God!
Mark, one of the biggest ways to make this dish a success is you have fresh—Mark of course let’s not forget to use garlic in our Ratatouille. I know it can be a pain to work with, so here is a quick fix.
Give it a quick pop here and dice away. I can’t believe she broke my heart, just kidding. Onions get you every time. Mark, you really have two main concerns with your recipe fix, you only use about four vegetables in your whole dish. You saw what I used. Here is your next problem, caramelizing vegetables, cooking is all about patience. I’ve said it before, I will say it again. Take the time to caramelize these vegetables. So, with this gigantic pot, we’re going to heat with a little virgin olive oil and we’re going to caramelize this garlic and bulb onions. As you can see the onions are starting to get nice and caramelized, remember patience. It takes about 10 or 12 minutes to do so. Don’t forget no one want boiled Ratatouille. So, the next thing we’re going to add is this eggplant and red and green peppers. Oh, yeah, look how awesome these vegetables look! At this point, let’s go ahead and add in our zucchini and squash and our fresh tomatoes.
Mark, we are just about to finish. At this point, we’re going simply adjust seasonings with salt and pepper. Remember, season once, taste twice. Next, we’re going to finish off with fresh basil and fresh margarine. Mark, this smells absolutely incredible! Obviously there’s quite a bit here but let’s not forget to French eat this for entire meals not just sides. Oh man, Mark the flavors in this are absolutely incredible! Don’t you dare boil this dish again. Use that caramelization technique. You are going to be more than happy.
