We are going to prepare some bananas to go as a garnish with some chicken or pork. And we have some finger bananas, not too ripe, I am to peel them and slice them, and it’s of course very simple, very easy, it is also very fast, and you can do that at the last minute. I just have to split them,
I am going to brush my tray and that will prevent the bananas to stick to the aluminum foil. And bananas as you know are used usually for dessert. Bananas can be salted and they can be spiced. And they really do a great dish complementing especially white meat.

I have also some maple syrup. I am going to brush the bananas with a little bit of the maple syrup, not too much because it would be too sweet, and the maple syrup will help caramelize the bananas. And we have some fresh Rosemary and I am going to add some leaves of Rosemary on top of my bananas and they will give this very fragrant flavor to it. Now, we don’t have to top it, we just pick the leaves and add them to my bananas.
Ready to go in the oven, 3 to 4 minutes. Our bananas are ready and I am going to brush them with some of the bourbon, a whisky, and that will bring some smokiness to it, the complexity to it as well. Spatula. We can smell the bourbon, we can smell the Rosemary. Time to taste. It is really fantastic! The bourbon, the bananas, the Rosemary, it is only three minutes and we have a great dish. Enjoy!
