Okay, so now what it is dish you’re making?
Susan Righetti: We’re making salsa which is the ketchup of Santa Maria salsa barbecue I guess would say. It’s the compliment to the meat. We’re going to take couple cans and tomatoes. Well, these can be crashed by hand or with the crasher or you can dice tomatoes.
And we’re going take nice red onion, just to mostly chopped, to green onions, just sliced, okay. Then I’m going to add two cans of dice green chiles and we use Ortega brand. It’s just a mild California or anaheim chili, diced, crashed, have olive oil. Splash with golden balsamic vinegar, very sparingly and then some red homemade wine vinegar, we’re going to put a splash to that.
Chef John: And that’s red wine vinegar?
Susan Righetti: Red wine vinegar, right.
Chef John: Okay.
Susan Righetti: Put garlic salt, pepper whatever, we’re getting a good shape to that.
Chef John: Okay now, just basically what’s in the seasoning mixes you just told me?
Susan Righetti: Salt, pepper, garlic, parsley, it’s a very basic blend of Santa Maria style seasoning that we used on everything that we salt, normally salt in pepper.
Chef John: Well, that looks amazing.
Susan Righetti: It’s very simple, very good. You chill it before you serve it but it’s great. As aside for the meat, it’s almost like a salad.
Chef John: Exactly.
Susan Righetti: It’s very good.
Chef John: And there is something that’s bit fine and make the night before.
Susan Righetti: Yes.
Chef John: So there it is, Susan Righetti one of the local authorities on Santa Maria Cuisine making the traditional salsa there. You can use this as a sauce.
