Jason Hill: Hi! I’m Chef Jason Hill; here at Huntington Beech one of the most authentic German October feast here in Southern California. I wanted to share on October feast recipe with you. A sauerkraut recipe was the first thing to come to mind. So they were making sauerkraut with bratwursts, if you go to trip in October feast party be a good place to give this recipe. After sampling a few good easy recipes, I picked up some ingredients took in some other sites and headed home.
Some of those sites are quite interesting, al right, let’s get started. I was able to get a few easy recipes and I put this one together I know you’re going to love it. An easy method for this recipe is a crock pot or slow cooker, I have mine pre-heated on high and my first step is to have the sauerkraut I have two pounds here that I’ve rinsed and patted dry. Next I place one teaspoon of caraway seeds and a half cup apple sauce. Now just stir this around drop in two bay leaves and next we are going to saute your onion, bacon and a tablespoon of juniper berries. I place one tablespoon of juniper berries in a plastic bag and lay down we’re going to smash and release their flour, that’s about way you want to right there.
Alright, check it out I have my pan pre-heated on medium-high heat and I’m going to add three slices of diced bacon, before I diced my bacon I put it in the freezer for about 50 minutes makes a lot easy to dice. After about a minute add your onion and let that cook down just a little bit. Let’s put in our garlic shallot puree or one minced clove of garlic, stir that around followed by juniper berries, let this cook in a minute and we are going head up with the wine. Alright I’m going to add about a cup of German Riesling wine, we’re going to let this cook down for about a minute and then add it to the crock pot, after I add the wine stir and scrap the bottom with the pan.
Now add this to your crock pot and we’re going to cook for at least an hour and a half, I got a great tip from my friend in Wisconsin. They recommenced marinating my bratwursts and beer overnight, and going to put these on the grill on low. The reason we cook our sausages on low because it insures the inside it’s fully cooked without burning the outer casing. After you pour your sausages of the grill I recommend buttering your favorite roll and get it nice and toast right on your grill.
Oh man! This is a perfect recipe for an October feast party. Already tailgating you decided to do. Personally, I think I could eat this year around. Thanks for tubing in.
