How to Make Sheer Khurma
Recipe for Sheer Khurma, you’re going to need a handful of Sylvania or Vermicelli, a
few threads of saffron, 2 pieces of long cloves which will remove at the end. A few
pieces of slightly crushed cardamom, 2 tablespoons of assorted nuts to taste, 2-3
tablespoons of oil, 1 liter of milk equals around 4 cups of milk and so we’re using for 4
cups we’re using 3 tablespoons of sugar. This will give you a medium sweet taste so you
can add or take them away according to you preference.
We will start by adding the oil to a pan and letting it heat up a bit and now add the long or
the cloved pieces along with the slightly crushed lychee or cardamom pods and another
bit of the oil and now remove it from the flame and add the almonds and the nuts and
now the Sylvania or the vermicelli and mix it together. Boil now for 2 minutes and then
we’ll add the milk make sure you don’t fight it so that the Sylvania color becomes dark
brown. Now add the milk and add the sugar as well.
Next add the few threads of saffron. Let the mixture boil and then we’ll keep it on the
slow fire for at least 15 to 20 minutes.
This has now been boiling for around 15 to 20 minutes. We can see it’s done so now we
can check for taste and see if we require anymore sugar. The color is off white and the
milk is thick and if you think the sugar is alright then it’s done. Your Sheer Khurma is
ready.
