Hello! This is Chef John from foodwishes.com with as promised, Ice, Ice, Icing. Icing is so easy to make yourself and there’s no reason to buy this. We’re going to make some simple lemon icing with a little pink food coloring. Starch with confectioner sugar, also known as powdered sugar. I'm going to use a cup and then, about table spoon of lemon juice, fresh lemon juice. And, about tablespoon of milk. Now, when you first start stirring this, it’s going to seem really thick. But, it’s amazing how that liquid slowly melts the sugar and it turns into like a pour able, spread able icing.
So, once to that consistency, I'm going to put a little food coloring. Now, what happen here, let me explain this. My red food coloring was dry, sweat it in a few drops of water to loosen it up. So, when added it to this, I thought it was going to be kind of weak. So, a few drops where I usually put one and it turn into pepto-bismal color. So, I decided to like it and add a little more powdered sugar, just a few more drops of milk. And then, it became one shade lighter.
Anyway, from pepto-bismal to pretty in pink. Now, when you use this, couple of things to remember, you want to do that on a rack so the excess drips down because of that professional look. And, if you’ll going to put sprinkles or garnished it in any way, do it immediately while still wet because if you let it set for a few minutes, the outside of the icing hardens to detach. And, those sprinkles will just bound side and it will be very disappointing. So, there you go, very simple, very easy. Some people put vanilla in their icing, I don’t, but you can. You can put extra if you want. This is just a really simple lemon version. By the way, our food coloring this days are natural so I base. So, don’t worry about it. That’s it! Ice, ice, icing.
